Fabulous paste made with Amaretto biscuits, for creating the characteristic ice cream from Lombardy. A mixture of biscuits made with sweet almonds, bitter almonds, sugar, egg white and almond paste. In the Saronno version the biscuit is crunchy and crumbly, while in the Sassello version (Liguria) the biscuit is oilier and therefore softer. Ideal when used with a touch of the famous Disaronno liqueur.
